Smothered Pork Chops

        •       4 bone-in pork chops
        •       Slap Ya Mama seasoning (or Cajun seasoning), to taste
        •       Garlic powder, to taste
        •       Salt and pepper, to taste
        •       2 tablespoons oil (vegetable or olive oil)
        •       1 onion, thinly sliced
        •       1 bell pepper, thinly sliced
        •       3 cups water

For the gravy:

        •       2 tablespoons oil (vegetable or olive oil)
        •       2 tablespoons all-purpose flour
        •       Salt and pepper, to taste

Instructions:

        1.      Season the pork chops generously with Slap Ya Mama seasoning, garlic powder, salt, and pepper on both sides.
        2.      In a large skillet or pot, heat 2 tablespoons of oil over medium-high heat.
        3.      Once the oil is hot, add the pork chops to the skillet and sear them for 3-4 minutes on each side, or until they are golden brown. Remove the pork chops from the skillet and set them aside.
        4.      In the same skillet or pot, add the sliced onion and bell pepper. Cook for 3-4 minutes, or until they start to soften.
        5.      Return the pork chops to the skillet, arranging them on top of the onions and peppers.
        6.      Pour 3 cups of water into the skillet, covering the pork chops, onions, and peppers.
        7.      Reduce the heat to low, cover the skillet or pot, and let the pork chops simmer for about 1 hour and 30 minutes, or until they are cooked through and tender.
        8.      Once the pork chops are done cooking, remove them from the skillet or pot and set them aside.
        9.      In a small bowl, mix together 2 tablespoons of oil and 2 tablespoons of all-purpose flour to create a roux.
        10.     In the same skillet or pot with the leftover juices and water, heat the mixture over medium heat.
        11.     Gradually pour the oil/flour mixture (roux) into the skillet or pot, whisking constantly to incorporate it into the cooking liquid.
        12.     Continue whisking until the gravy thickens to your desired consistency, about 5-7 minutes.
        13.     Season the gravy with salt and pepper to taste.
        14.     Serve the smothered pork chops hot with the homemade gravy spooned over the top over white rice.

Cheesesteak Egg Rolls

INGREDIENTS:

  • 1 Yellow Onion
  • 1 Green Bell Pepper
  • 2lbs Shaved Beef
  • Egg Roll Wrappers
  • Provolone Cheese
  • Nacho Cheese
  • Vegetable Oil

INSTRUCTIONS:

  • 1. Heat a skillet over medium-high heat and add a tablespoon of vegetable oil.
  • 2. Add the onions and bell peppers to the skillet and sauté until they start to soften, about 5 minutes.
  • 3. Push the onions and peppers to the side of the skillet and add the shaved beef. Cook until the beef is browned and cooked through, breaking it apart with a spatula as it cooks.
  • 4. Once the beef is cooked, mix it with the onions and peppers in the skillet.
  • 5. Lay out an egg roll wrapper on a clean surface with one corner pointing towards you (like a diamond shape).
  • 6. Place a spoonful of the beef mixture onto the wrapper, followed by a strip of Provolone cheese and a drizzle of nacho cheese sauce.
  • 7. Fold the bottom corner of the wrapper over the filling, then fold in the two side corners. Roll it up tightly, sealing the edges with a bit of water.
  • 8. Repeat with the remaining wrappers and filling.
  • 9. Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C).
  • 10. Carefully place a few egg rolls into the hot oil and fry until golden brown and crispy, about 3-4 minutes per side.
  • 11. Remove the egg rolls from the oil kand place them on a paper towel-lined plate to drain any excess oil.
  • 12. Serve the cheesesteak egg rolls hot with extra nacho cheese sauce for dipping.

Meatball Stew Recipe

Ingredients:

1LB GROUND PORK

•1LB GROUND BEEF

•3 EGGS

•1 CUP ITALIAN BREAD CRUMBS

•1 CUP WORCESTERSHIRE

•4TBS TABASCO

•1 CUP GARLIC

•1 CUP SLAP YA MAMA

•1/2 CUP BLACK PEPPER

•3 TBS SALT

•1 SMALL JAR ROUX

•1 CUP YELLOW ONION

•1 CUP GREEN BELL PEPPER

•1/2 CUP CELERY

•1/2 CUP OIL

•2 QT BEEF STOCK

Instructions:

1. In a large mixing bowl, combine the ground pork and ground beef.

2. Add the eggs, Italian bread crumbs, 1/2 Worcestershire sauce, 1/2 Tabasco sauce, 1/2 Garlic, 1/2 Slap Ya Mama seasoning, 1/2 black pepper, and 1/2 salt. Mix well until all ingredients are evenly distributed.

3. Form the mixture into meatballs of your desired size and set aside on a baking sheet or rack and place in the oven on ‘350 for 20-30 mins depending on how big your meatballs are.

4. In a large pot or Dutch oven, heat the oil over medium heat.

5. Stir in the jar of roux until well combined and smooth. When all the clumps are gone stir in your chopped onion, bell pepper and celery and cook down until soft.

6. Add the 2 qts of beef stock and then the rest of your seasonings in.

7. Lets this cook for about an hour or two and stir occasionally. Carefully add the meatballs to the pot, making sure they are submerged in the sauce.

8. Turn your stove to simmer and serve 5-10 after putting in the meatballs.

9. Serve the meatball stew over white rice!
