Turkey Stuffed Bell Peppers

Ingredients:

  • 4 large bell peppers, tops cut off and seeds removed
  • 1 lb ground turkey
  • 1 packet taco seasoning
  • 1 tsp Slap Ya Mama seasoning
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • ½ tsp sea salt
  • 1 cup black beans, drained and rinsed
  • 1 cup cooked quinoa or brown rice minute rice
  • 1 cup marinara sauce
  • 1 ½ cups Mexican cheese blend, shredded

Instructions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C).
  2. Prepare the bell peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Bring a large pot of water to a boil. Carefully place the bell peppers in the boiling water and cook for 10 minutes until they are slightly tender. Drain the peppers and set them aside in a baking dish, cut side up.
  3. Cook the ground turkey: In a large skillet, cook the ground turkey over medium heat until browned and fully cooked. Drain any excess fat.
  4. Season the turkey: Add the taco seasoning, Slap Ya Mama seasoning, garlic powder, black pepper, and sea salt to the cooked turkey. Stir well to combine and cook for an additional 2 minutes.
  5. Mix in the beans, rice, and marinara: Stir in the black beans, cooked quinoa or brown rice, and marinara sauce. Mix well until evenly distributed and heated through.
  6. Stuff the peppers: Spoon the turkey mixture into each bell pepper, filling them almost to the top.
  7. Bake: Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
  8. Add the cheese: Remove the foil, sprinkle the shredded Mexican cheese evenly over each pepper, and return to the oven. Bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  9. Serve: Remove from the oven and let the peppers cool for a few minutes before serving. Enjoy your stuffed bell peppers!
